Since off-topic is allowed, does anyone know if a 1975 225" slant-six will fit in a 1966 Dodge 330?

Yep. The '66 and '75 slant six hasn't changed much between these years. Should be no problem.

...is it a big operation though? I know that theoretically, one of the things about the '75 Dart was that you could swap in a 318 where the 225 was and still use the same mounts and everything. Was the 1966 330 designed the same way?

The Dart and Valiant of the early 60's utilized engine mounts that were compatible with the 225 and 318. The only thing that needed to be changed between engine swaps were the engine brackets used to mate with the mounts on the crossmember. Since most Darts and Valiants came with 318's or 225's Mopar made things easy by keeping the mounting locations on the crossmember the same between both blocks. The 330 Chassis on the other hand, was available with engines ranging from the 225 Slant, all the way up to the 383 big block. I recall some models even coming with a 413, but this could be wrong. There may be a possibility that the crossmember will need to be modified to accept the mounts from the 225.
