Is anyone using Mac BootCamp to run windows to control their digital, or even the Dolby Processor?

I'll be getting a new mac laptop and hoping to be able to use it rather than the very old win laptops to run whatever software we have to deal with when the digital gets here in about a month.

Anything I quirks I should know about?

I have Bootcamp on my old Macbook to run Windows XP, but I seldom use it now; I find it to be somewhat unstable.

On the new Macbook Pro with System 10.8.5 I run Windows XP, 7 and an evaluation licence of 8, now expired, and Fedora Core 18 Linux on virtual machines with VMWare Fusion. I find this works better.

Of course, you don't get a serial port on a Mac. Some USB-serial adapters are not very happy with Vista, 7 or 8, but I have one which works fine in XP, 7 and Apple system 10.8.5; I never tried it in 8.

We actually use VNC Viewer and our wireless network to proxy into our servers using our Mac. This might be something you want to look into. You don't need to buy touchscreens and keyboards for each projector then. However, you might want to have a one old monitor and keyboard handy in case there is a wifi disaster.

So I take it that this Mac Bootcamp is just VM Ware? Virtual Machine software?

No, Bootcamp is a Mac application that allows you to install a full native Windows installation on a separate disc partition. I comes with the necessary windows drivers for the machine and a repartitioning tool.

After installation, you can choose which system to boot through corresponding GUI settings or at boottime though startup key combinations.

Oh, gotcha. Dual boot.

I've set up a number of machines with Linux/Windows dual boot capabilities. Not too with familiar with Mac software.
