In Northern California, Century has jumped on the kettle-corn band wagon in a big way. Are the other chains doing so as well? If you sell kettle-corn whose product do you use and what has your experience been in terms of effect on sales and effect on your popper (if you use one popper for both types of corn). Thanks!

You probably will need to use a separate popper for kettle corn (or a special popper set up that will allow you to easily change temperatures).

Kettle corn, because of the sugar used needs to be cooked at a much lower temperature, which means the cleanup needs to be done before you switch back to your normal corn.

One of the "art house" theaters sells kettle corn.

I see a lot of this at county fairs. Gold Medal is the most popular here in this area.

Kettle Corn is very popular in So AZ. there are a few companies that have portable roadside stands that they also take to public events. And they are as popular as ever. They are equipped with huge gas operated kettles. Anyhow, there recipeies (by flavor) include sugar, salt and vinilla.

manley used to make one of the best caramel corn cookers that was excellent for all flavours of candied corn
The only thing was you had to use a harder variety of corn so it didn't break up
(corn was still popped seperately then put int he cooker)

I know I've seen poppers with a switch so it can do both Kettle Corn or Traditional Corn. I'm sure you could check with Proctor for that.

There are Scott, the biggest problem though is that the kettle needs to be thoroughly cleaned before being switched between the two (especially going from kettle corn to traditional corn)

On the plus side, kettle corn can be popped days in advance due to the sugar in it acting like a preservative.

We pop our own kettle and carmel corn. The kettle corn we pop in the same popper as our regular corn (and old 1940's manley) and don't make any changes. It doesn't seem to create any sort of problem. And the corn is popped with the sugar at the same time.
