I am looking for opinions on External/Centralized Storage options as well as remote ingest options. What hardware are you guys using? What do you like?

I really like the Synolgy NAS:es. Could be easily be connected and used as centralised storage in a D-Cinema network.

You should look at the GDC content storange servers since they are specifically designed for that purpose. I am not sure they are Dolbly compatible, but they might be. GDC seems to be including Dolbly on all their product look up charts lately. They offer purpose bult content storage up to 32 GB.
