Just had this happen a few days back, was wondering what could be causing this to happen. The projector had orginally, completely shut down by itself in the middle of a film and now when we try to start it up, the light screen that shows the voltage and battery, dims to 0 and back to 120 and repeats this cycle. It is as if it is trying to collect enough power to boot.

Lets start with the make and models of the equipment you are talking about. Sounds like you are talking about an UPS here and not the projector or server. If you are talking about an UPS check the voltage where it is plugged into. Make sure the power it is getting is good and not dropping to the point the battery is kicking in. If that happens a lot you will end up depleting the battery. If the power going to the UPS is good then it is likely the UPS is bad or has a bad battery. You can try bypassing it. Make sure the power is good first. Don't want to take out equipment power supplies. That is one things the UPS is there for.
