Judging from what I have read, it seems the following manufactures of digital equipment is preferred:

Projectors: models made by Barco and Christie

Servers: Doremi and Dolby Dss200

Correct?

As for servers (IMO): Dolby, GDC, then Doremi with Dolby being the most user friendly.

Are the current GDC servers still putting their OS on a non-RAIDed drive, or did they already fix that?

Nope, the GDC servers are still more vulnerable to failure than their competition. (Note, this is not an opinion.)
