We have a number of CP55s that have been used with DTS and wired with mono surrounds. I was wondering if it's possible to get stereo surrounds without a Cat441 card. Is it still even available from Dolby? Any ideas?

The 441's are here and there on the used market. Dolby has not made them in a while.

It's almost as easy to just find a used CP65. They are quite cheap these days.
