I had a look for a topic about this but I couldn't find anything.

Anyway, I have an old B&H Filmosound and Ampro stylist that I would like to use with an external amplifier and speakers, how would I drop the projectors only output, powered speaker jacks, to a useable line level? I assumed this was possible somehow. Pretty sure there are both 16 ohm.

You will need a 10 watt or higher resistor to terminate the 16 ohms output; 20 ohm will be OK. In addition, 100k resistor 1/2 watt to feed to your line input. Louis
